Mock Swiss Steak – The quick & easy version!

I had some cube steak in the freezer which I normally turn into Country Fried Steak. Unfortunately, that dish doesn’t quite fit into the new diet. Oh, I won’t give up my tasty favorite dish but for now, it will have to wait.

So, what to do with my cube steak? After poking around the internet, I came up with Swiss steak. This was a dish I knew my hubby would love. I didn’t however, feel like jumping through all the steps of standard Swiss steak. Let’s just say, I’ve “dummied down” the recipes I found!

If you want Swiss steak but are short on time, I think you’ll enjoy this recipe.

Sloppy BBQ Sandwiches

Sloppy BBQ Sandwiches are one of my go to meals.

They make for a quick & delicious meal that is kid-friendly and husband approved. I’ve made these for my daughter’s band (200+ kids) and they were a big hit. I usually serve them with my Homemade Crispy Fries. They go well with coleslaw and/or potato salad.

If you would like to kick them up a notch, add a bit of bell pepper & teaspoon or two of your favorite hot sauce.

Three Bean Shredded Beef Chili

A couple of years ago my husband came home from his new job and told me about the chili cook-off that is held there every year. I was intrigued but I had one problem. I don’t like chili. Not too surprising, huh?

So I set out to study chili recipes and Three Bean Shredded Beef Chili is what I came up with. We swept the awards that year, winning People’s Choice & the Top Prize. You can see a picture of my hubby with his prize below the recipe. Unfortunately he kept my his plaque at work.
