An easy to make, easy to customize recipe for burritos. Make and store ahead for a convenient after-school or late-night snack. huddlenet.comI’m going to let you in on a secret – I have five loads of laundry sitting on the couch waiting for me! Monday I got a cold or is it the flu? Whichever, I feel like doody.

Ok, you don’t really give a doody about that, do you? Cold medicine has made me doodlido! Onto the burritos…

Burritos are one of my favorite snacks, lunches, late night meals. They are meal that ALL of my family can agree on. All six kids! Well, we prefer different styles but making them tailored for each of us is a breeze.

Freezer Burritos can be customized to your preferences and taste delicious. The hubby prefers “the works” in his burrito – meat, beans, rice, onions, peppers, tomatoes. Most of that are foods that my daughter and I won’t eat! So we prefer a nice mellow bean & cheese version.

The burritos can be cooked in the microwave, wrapped in paper towels. Three and a half minutes are perfect for two in my microwave. I use my Mexican Seasoning because I prefer the taste but you can use a packet of taco seasoning.

On a side note: My hubby has taken his lunch to work for years. He either takes leftovers or when we have none “left over,” he takes a T. V. dinner. He rotated through the different brands for years. As you can imagine, he’s bored with them. So now I make them. I have a freezer that is dedicated to his lunches.

Mexican freezer dinners are easy to make. I try to make them as fast as possible. So I use boxed Spanish rice and canned refried beans. You can certainly use homemade.

I really should start making my own burritos. Hubby usually buys a ton from the store to have on hand for snacks, late dinners etc. Thanks for sharing at Simple Supper Tuesday.

I am a burrito junkie and love being able to control what’s inside them, especially since I’m a ‘selective eater’! ~Stacy
